Best Ever Mungbean Dhal

Gut bacteria powerhouse recipe.
ingredients:

1 cup of mung beans

2 cups of diced pumpkin

1 cup of diced celery

either 1 bunch of fresh spinach chopped or 1 packet of frozen spinach

vegetable stock

spices: half a teaspoon of each

fennel seeds

ginger powder

garlic powder

black pepper

turmeric powder

method:

pre soak mung beans for one hour in warm water

then using coconut oil fry pumpkin, celery and spices for 5-10 minutes.
then add mung beans and spinach, stir for another 5-10 then add stock.
cook until pumpkin and beans are soft.
serve with coriander and fresh lemon juice.
