Easy Drop Egg Immune Boosting Soup

The easiest soup to make as soon as you start to feel unwell, of course you still need to dose up on your herbs and oils but this will warm you up.

Ingredients:

4 garlic cloves chopped finely

good knob of ginger finely sliced

1 leek chopped

4 stalks of celery chopped including leaves

4 eggs

1 tin of creamed corn with no added sugar

vegetable stock

tamari to taste

spring onion to top

Method:

add ghee or coconut oil to pan

add garlic, ginger, leek and celery and cook for 5 minutes on medium heat: add either 3 cups of fresh vegetable stock or vegan stock powder with water, cook for 5 minutes, add corn, once boiling, crack eggs straight into soup, take off heat and stir through until cooked.

add tamari to taste and chopped spring onion.
