Jackfruit and Black Lentil Curry

Ingredients:

2 cups of diced pumpkin

1 chopped red capsicum or bell pepper

1 tin of black lentils

1 packet of Upton’s Smoked Jackfruit

1 jar of TurbanChopsticks Vegan Butter Chicken

1 can of coconut cream

1 tin of diced tomatoes

2 tablespoons of corn flour

Coconut oil for frying

Method:

Heat coconut oil in frypan.

Add pumpkin and red capsicum and fry for 5 minutes.

Add jar of Vegan Butter Chicken.

Add lentils and jackfruit.

Simmer for 5 minutes.

Add coconut cream, tinned tomatoes and corn flour and cook on low to medium heat for 15 minutes.

Enjoy with rice or wraps and lemon wedges and coconut yoghurt.
