Delicious Easy Gluten Free Vegan Cheesecake Slice

This is so easy, I really feel anyone could get this right!

Base: one packet of Leda Gingernut biscuits and 1/4 cup of vegan butter softened, vanilla extract and extra cinnamon and processed in the food processor, add to lined or greased pan: bake in oven at 200 degrees for 15 minutes.

While the base is in the oven, pour boiling water on 200g of raw cashews. in the cleaned food processor add a vegan cream cheese I used toffuti, 1/2 cup of apple juice concentrate, juice of 3 squeezed limes, 6 drops of Young Living Lime oil, 1/4 cup of Orgran custard mix or any vegan custard powder, drain cashews add everything in the processor blend top onto base, no need to wait till it cools pop in the oven for 20 minutes until it crisps slightly on the edges.

You are done, serve with fresh fruit.
